Use:
Place the mat on a silicone mat or Teflon baking paper, spread tempered couverture/chocolate over it, pull the mat away and let the bases set. The plates can then be sprinkled with ganache or cream. Very efficient work. With this mat you can also easily make fine plates made of isomalt or caramel.
