Isomalt Zucker kochen - mit Anleitung und Rezept
Bevor Sie mit dem Arbeiten beginnen, überprüfen Sie, ob alle Zutaten und Werkzeuge vorhanden sind.
In einer Kasserole / Topf 1 kg Isomalt (sweetART Artikel 04040) in kleinen Mengen nacheinander zum Schmelzen bringen.
Wenn der Isomalt geschmolzen ist (Achtung sehr heiß, große Verbrennungsgefahr) Wasser und Weinsteinsäure (sweetART Artikel 02170) einrühren.
Sollte der Isomalt eine Farbe bekommen, dann zuvor das Wasser mit wasserlöslicher Farbe (sweetART Artikel 02159) einfärben.
Den Isomalt Zucker mit Hilfe eines Thermometers (sweetART Artikel 02230) auf 150 °C kochen.
Den fertig gekochten Isomalt zum Abkühlen auf eine Silpatmatte (sweetART Artikel 02210) gießen und einige Male zusammenschlagen.
Den ca. 70 °C heißen Isomalt mit Hilfe von Handschuhen (sweetART Artikel 02190) zum Seidenglanz ziehen. Danach den fertig gezogenen Isomalt in kleine Stücke schneiden. Fertig abkühlen lassen.
Nun kann mit Hilfe Zuckerzieh Zubehör (sweetART Set groß, Artikel 02010, Artikel Set klein 02011) das Zuckerblasen und Zuckerziehen beginnen.

The resulting principal components of Isomalt are 6-0- α-D-glucopyranosyl-D-sorbitol (1.6-GPS) and 1-0- α-D-glucopyranosyl-D-mannitol dehydrate (1.1-GPM).
Isomalt is granular and can be melted by heating to a clear liquid. If it cools again, the isomalt becomes firm and hard again. Ideal for sugar-free sweets or bakery products.
